Ingredients

1 pkg Mandarin Chow Mein Noodles

Sauce

2 tbsp oyster sauce
1 tbsp soy sauce
¼ cup chicken broth
1 tsp sesame oil
2 tbsp Shaoxing wine or dry sherry onions, chopped
2 tbsp vegetable oil

Stir Fry

4 cups shredded cabbage
2 cloves garlic, finely chopped
2 small carrots, julienned
4 scallions, chopped

Marinating

1 boneless chicken breast, sliced.
2 tbsp cornstarch
¼ tsp salt

Instructions

Add chicken and marinating ingredients into medium sized bowl.  Mix well and coat chicken evenly.

Combined all sauce ingredients in a small bow and stir to mix well.

In a medium pot, boil water.  Blanche Chow Mein noodles in boil water, drain, and set aside.

heat 1 tablespoon of oil in a large nonstick wok over medium-high heat.  Spread sliced chicken in the pan, cook well done until golden brown. Transfer the chicken on to a plate.

Pour remaining oil into pan, along with garlic.  Stir a few times to release fragrance.

Add vegetables.  Cook and stir until vegetables start to turn soft.  Add noodles.  Toss a few times with a pair of tongs.  Add the cooked chicken and pour sauce mixture.  Toss everything with tongs and mix well.

Add scallions and toss until sauce is absorbed.

Serve and enjoy!
