Shanghai noodles are created in two versatile widths, and available in both thick and thin. In North American cuisine, these fresh Asian noodles can be easily substituted in recipes calling for linguine or spaghetti. In traditional Asian cuisine, these most resemble Udon noodles, and are the base for the signature spicy stir-fries of the Szechuan province.
